WThis is a simplified version of a cocktail featured on our latest drinks list. It's a batch pre-mixed which is packed full of tastes of a festive period, rendering it excellent for a celebration. Save the extra citrus syrup to use in morning drinks, sweets, or to mix additional servings of bikinis.
Bikini
Serves 10 people
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
Making the Cordial: Put all the ingredients inside a saucepan, bring to a simmer, mixing to dissolve. Then, turn off the stove allowing it to cool down fully. Decant into a sealable bottle, close it and refrigerate it in the refrigerator, it will last for around four weeks.
Preparing the Batch Mix: Mix the specified liquids into a sizeable container, let it rest for one hour, then strain best through cheesecloth, to ensure it's perfectly clear.
For serving: Add 85ml of your cocktail base into your mixing glass containing ice, gently stirring carefully for a minute to chill. Strain to a cold coupe glass or equivalent, top with the cranberries adding the final touch using a quick spritz of mandarin oil above the glass.
